When Life Gives You Peanut Butter, Make Peanut Butter Cookies!

Yesterday was one of those dreary summer days in Tampa.  It has been like that a lot this summer – I am really ready for fall for multiple reasons; Pumpkins, football, cool temps etc….  It was tough getting my day started after my morning work out – I honestly just wanted to sit at my desk with a huge mug of tea and Pin on Pinterest all day long.  My schedule told me otherwise…  After dragging myself out of my chair, I ran some errands and had a lot of office work scheduled for the afternoon – and baking ridiculously (easy and amazing) peanut butter cookies was not necessarily on the list.  I think my internet provider was planning a conspiracy against me for the afternoon… as soon as I finished lunch, my internet was done.  It was the worst kind of not working too because it showed that everything was working, I just couldn’t do anything.  So therefore, something was wrong!!

Instead of getting irritated (well I did that too), I decided to make peanut butter cookies from peanut butter (get it?).  I found this recipe on Pinterest months ago but totally forgot about it.  Peanut Butter Cornmeal Cookies via A Pastry Affair. The recipe is so simple – only 6 simple ingredients – Well, I added one more ingredient to boost the nutritional value.  This recipe is gluten free and is one of the only peanut butter cookie recipes that does not have butter – HOORAY!  And let me tell you, these cookies are to die for.  Each simple ingredient truly shines. 🙂  Enough talk, lets get to baking!

Peanut Butter Cornmeal Cookies – Adapted from A Pastry Affair

Yields about 18 – 24 cookies

1 cup chunky peanut butter (or smooth with 2 tbsp unsalted peanuts, crushed)

1/2 cup granulated sugar, plus extra for rolling

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking powder

1/3 cup cornmeal

1 Tbsp ground flax (optional)

Preheat oven to 350 degrees F (180 degrees C).

In a large mixing bowl, cream together the peanut butter and sugar. Add the egg and vanilla extract, mixing well. Stir in baking powder, cornmeal and ground flax. The batter will be very thick. Add 2-3 tablespoons water to smooth out the batter if needed.

Form tablespoon-sized balls and roll cookie dough in sugar. Place cookies on a baking sheet and flatten. Press a fork into the top to create decorative patterns. Bake for 10-12 minutes. Cool on the baking sheet for at least 5-10 minutes before moving to a cooling rack to cool completely. The cookies will be very fragile and need to cool down before they can be moved.
