Confession: I love Candy Corn!

In honor of Halloween Week and the delicious yet not so nutrient dense Candy Corn – Here is my Candy Corn makeover…

The Candy Corn Parfait!! Candy Corn Parfait - The Soul of Health

This parfait is fun, simple and a perfect afternoon snack before heading out to brave the neighborhood.  This will keep your tummies full and will help keep your kids focused on the task ahead – Get to the best houses before all the full size candy bars  good flavored floss containers are gone! 🙂

This is a fun food activity the whole family can make together! You can usually find prechopped pineapple and cantaloupe in the produce department if you don’t feel like wrestling with chopping a whole pineapple!

Candy Corn Parfait:Candy Corn Parfait

Ingredients:

  • Chopped Pineapple
  • Chopped Canteloupe (Can use oranges or any other orange fruit you can think of)
  • Greek Yogurt (I used Plain Nonfat Fage with a drizzle of honey)

Layer chopped pineapple on the bottom of your favorite glass or clear plastic cup (most likely the safest idea if young kids are involved). Then add a layer of chopped cantaloupe. Top layers with a dollop of Greek yogurt. To sweeten things up, you can add a drizzle of honey or use Vanilla or Honey flavored yogurt. Dig in!
