Creamy Avocado Zoodles with Blackened Shrimp?!?

Ohhhh yes, my friends, you read that right!! This recipe has quickly climbed to the top of my go-to list for so many reasons!

  1. It’s so nutritious! Hello, zucchini is the bomb.com and packed with vitamins and minerals plus healthy fats from the avocado and lean protein from the shimp! Yay!
  2. It’s simple-D-dimple! All it takes are a few twirls of the wrist on the Spirilizer or Veggetti, sautéing shrimp or popping them in the oven, mashing avocado and you’re literally done!
  3. It’s DELICIOUS!!! Now I’m not one to pat myself on the back, but I have done countless cooking demos and live tv segments demoing this recipe and everyitime it’s a huge hit! People love the fact that it’s simple, low carb, high veggie (that’s a thing :), includes yummy healthy fat, and packed with protein while still being totally delicious!

I promise, you will not be disappointed if you try this!

Creamy Avocado Zoodles with Blackened Shrimp

Serves: 4 Servings
Simple, delicious and nutritious, this recipe is sure to be a weeknight staple! Enjoy!
  • 1 tablespoon avocado oil (or extra virgin olive oil)
  • 4 medium zucchini,
  • 2 avocado, mashed
  • 1 lemon, juiced
  • 1 tablespoon plus ½ teaspoon of Blackened Seasoning, divided
  • ½ teaspoon salt
  • 1 large tomato, deseeded and diced
  • 1 pound of uncooked medium shrimp
  • Olive Oil Cooking Spray
  1. For the Shrimp: Preheat oven to 375 degrees. Spray a 12-cup muffin tray with cooking spray. After removing skin from shrimp, add 1 shrimp per muffin cup. Then sprinkle both sides of shrimp evenly with blackened seasoning, about 1 tablespoon. Place trays in oven and cook for 10-12 minutes or until no more pink remains.
  2. For the Zoodles: In a medium bowl, mash avocado. Add lemon juice, salt and ½ teaspoon blackened seasoning and mix until combined. Set aside.
  3. Heat medium saucepan over medium-high heat. Add avocado oil to hot pan. Add Zucchini noodles and saute for 4-5 minutes, just until they start to brown and soften. Remove from heat and add avocado sauce and toss until well combined. Add diced tomatoes and toss until just combined. Evenly divide zucchini between 4 dinner plates and top with blackened shrimp.
  4. Enjoy!
