Happy Healthy Cinco de Mayo

Happy May!!

I love this time of year, spring is in full bloom, the sun is shining (hopefully), and Cinco de Mayo is right around the corner!!

It's Sombrero Time

Ohhh how I love a good mexican fiesta!! I especially love how simple it is to make mexican food healthy!! I have a delicious fish taco recipe to share (below), but I thought it would be fun to highlight some other healthy mexican favorites from my fellow, FABULOUS dietitian friends! ENJOY!!

And without further adieu… My darling, meet fish tacos!!

Healthy Fish Tacos

Fiesta Fish Tacos & Guacamole

These light and fabulous tacos are a perfect way to fit in fresh and colorful fruits and veggies, like avocado, tomato, cabbage. And to highlight ingredients; simply and deliciously!  I used wild cod in this recipe but you can definitely use halibut or some other white fish.

Serves 4: You can easily double or triple for a group.


Fish Tacos:

2 lb Wild Cod (could also use Tilapia, Halibut, or other white fish)

Juice from 1/2 lemon

1 teaspoon Simply Organic Fajita Seasoning 

Salt & Pepper to taste

For the Mexican Aioli:

2 Tablespoons nonfat Greek Yogurt

2 Tablespoons Mayonnaise

Juice from 1/2-1 whole lemon

1 teaspoon Simply Organic Fajita Seasoning


2 Tomatoes, chopped

Shredded Cabbage (as much as your heart desires)

8 Corn Tortillas


To Prepare Fish Tacos:

Preheat oven to 375 degrees. Place cod or white fish in a shallow glass baking dish sprayed with cooking spray. Sprinkle fish with seasoning and lemon juice. Bake for 15 minutes or until fish is flaky.

To Prepare Aioli:

Combine Greek yogurt, mayonnaise, lemon juice and seasoning in a small bowl. Add salt/pepper to taste.

To Assemble Tacos:

Lay 2 warmed corn tortillas on top of each other. Then top with 1/4 of the baked fish, add chopped tomatoes, cabbage and top with a few good dollops of aioli. Repeat 4 times and devour delicious tacos!!

PS: If you can’t tell, I’m totally in love with Simply Organic Spice Blends! They are a way better option than other brands – meaning they have less salt/sodium, they have organic ingredients and they taste awesome! It’s a very simple way to simply add flavor with out the crud! And no, I don’t work for them or get anything for saying that, I just love them 🙂
