Pumpkin Banana Muffins and Fall!

I have to say, fall is my favorite season!! There is so much fun to enjoy and look forward to.  Don’t get me wrong, I LOVE Christmas and the holiday season but for some reason fall is it for this girl!!

Fall is: Pumpkins, Thanksgiving, falling leaves (that I only dream about here in Florida), burning candles, fireplaces, apple cider, football — A lot, a lot of AWESOME!!  Two of my all-time favorite parts of fall (from the list above) are:

1. Pumpkins

2. Thanksgiving

And because I cannot celebrate or post recipes (quite yet) for Thanksgiving, I can bring you PUMPKINS!! Here are my top 3 favorite pumpkin recipes from around the web and my very own Pumpkin Banana Muffins!

1. Pumpkin Spiced Snickerdoodles by Skinnytaste.com — These tasty little cookies are made lighter by using whole wheat flour and decreasing the amount of butter and sugar. YUM!

2. Grain Free Pumpkin Tart by My Whole Food Life: This soy and grain FREE pumpkin tart looks so yummy and actually quite simple – This will definitely be accompanying me to at least one get together this season!

3. Pumpkin Overnight Oats by Megan Quint Gressel: I can’t wait to make these delicious pumpkin overnight oats! They are so simple and pack a huge nutrition punch to start out the day! YUM!!

Banana Pumpkin Muffins (or Bread):Pumpkin Banana Muffins

Serves 12

  • 1 1/2 cups whole wheat pastry flour (I use Bob’s Red Mill)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • t teaspoon cinnamon
  • 1 cup pumpkin puree
  • 2 large (overripe) bananas
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/4 cup unsweetened apple sauce
  • Optional: 1/2 cup raisins, nuts or dark chocolate chips

Preheat oven to 350 degrees. In a large bowl, whisk pastry flour though cinnamon (first 6 ingredients) until well combined.

In a separate bowl, mash the bananas (the riper the better) then add pumpkin puree, brown sugar, vanilla extract, egg, and applesauce. Stir well or use a mixer until combined.

Add wet ingredients to the dry ingredients. Stir until just combined.  If you want to add the optional ingredients stir them in now.

Spray a 9X5 bread loaf pan with cooking spray or prepare 12 cupcake tins.  If you are making muffins, fill each tin 3/4 full.

  • Muffins: Line 12 muffin tins with Bake for 18-23 minutes – Mine were finished ~20 minutes.
  • Bread: Spray a 9X5 bread loaf pan and fill with batter.  Bake for 50 minutes or until a knife inserted into center comes out clean.
