Pumpkin Spice Trail Mix

I am absolutely in LOVE with pumpkin right now!! It’s a million degrees in Florida with a trillion percent humidity with no sign of fall and I don’t care!! I’m still in love with the idea of fall and all things pumpkin! pumpkinsun

This morning, I got a fabulous idea for a pumpkin spice trail mix using REAL pumpkin puree and of course, pumpkin seeds! After I got home, it was all I could think about… I’ve decided to give in and this is what I came up with.

I LOVE this recipe for trail mix because it’s a perfect snack for adults and kids! I also love that it incorporates real pumpkin, a healthier source of fat (coconut oil) and a delicious sweetener! Your tummy and your body will thank you for making this! I promise!!

Pumpkin Spice Trail Mix:


  • 1 cup corn Chex
  • 1/2 cup mixed nuts
  • 1/2 cup pumpkin seeds
  • 1/4 cup dried cranberries
  • 1 Tablespoon coconut oil (melted)
  • 1/2 teaspoon pumpkin pie spice
  • 3 tablespoons pumpkin puree
  • 1 tablespoon maple syrup

Directions: Preheat oven to 250 degrees.

  1. In a medium bowl, mix first four ingredients (through dried cranberries).
  2. In a small bowl, mix together melted coconut oil, maple syrup and pumpkin puree. Then stir in pumpkin pie spice until well combined.
  3. Pour the pumpkin spice “sauce” into the Chex and nut mix. Stir until well combined.
  4. Empty pumpkin-Chex mix onto a baking sheet lined with parchment paper or coconut oil cooking spray.
  5. Smooth out the mix until it is evenly distributed on baking sheet.
  6. Bake for 45-55 minutes, depending on how crunchy/done you like it.

Tips: If you like really pumpkin spicy mix, add more spices! Also, I LOVE very crispy and “done” trail mix. If you prefer less crispy, cook it closer to 45 mins. If you’re like me, go for 55 mins to an hour.
