Savory Sundried Tomato and Cheddar Biscotti

 

When you think of biscotti you usually think of them dipped in coffee or tea. But what about a savory biscotti with smoked sundried tomatoes, garlic and cheddar cheese to delight in. These delicious biscotti are perfect for an afternoon snack, to dip in creamy Tomato bisque or to accompany any main dish.

Ingredients

2 cups all-purpose flour

¾ cup corn meal

½ teaspoon baking soda

1 ½ teaspoon baking powder

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon pepper

¼ cup Smoked Sun dried Tomatoes (I used California Sun-Dry)

¾ Cup Sargento Reduced Fat Cheddar Jack plus extra for sprinkling at the end, if desired – Could also use Sargento Reduced Fat Sharp Cheddar

½ cup low fat buttermilk

2 whole eggs; lightly whipped

2 teaspoons butter; melted

 

Instructions

  1. Preheat oven to 375°. Line a large baking sheet with parchment paper.
  2. In a large bowl whisk together flour, corn meal, baking soda, baking powder, garlic powder, salt and pepper.  Stir in Sun dried tomatoes and cheese until just combined.
  3. In a separate small bowl combine buttermilk, eggs and melted butter; stir.
  4. Add buttermilk mixture to flour mixture and stir until just combined.  Dough will be sticky.
  5. Separate dough into two equal portions.  Working with one section at a time, transfer dough to parchment paper and mold dough into ~10” X 3” rectangle and flatten slightly.  Repeat with the other half of dough.
  6. Bake at 375° for 25 minutes or until toothpick poked in the center comes out clean.   Let cool for one hour.
  7. Preheat oven to 325°.  Using a serrated knife, cut loaves into 1/4-1/2 inch slices.  Replace each slice onto ungreased baking sheet and bake at 325° for 12 minutes.  Turn slices over and sprinkle with ~1 teaspoon of cheese per slice (if desired).  Bake for 15 minutes.  Transfer biscotti to wire racks for cooling. The biscotti will harden as it cools.
