I feel like it has been a long time since the last time I blogged.  The last week(ish), I really just feel like I have been trying to get back into the swing of things after getting back from Oregon and the marathon.  I took all of last week off from jogging. It was actually easier than I thought it was going to be…. I thought I would be that person having crazy running withdraws but alas, I survived! I really do think I am much better off now, because of it!

My first jog back was yesterday and it felt oohhh sooo goooood!! There was a slight chill in the air and I felt fresh – AMAZING! My husband had the day off from work (Seriously, who even knew there were people that get Columbus Day off?) so he came along for the run – It was great! We were actually cruising at a pretty good pace too!  It really did feel good to get out there on Bayshore again — My second love 🙂

Again, if you know me well, you know that I am a serious food thinker for at least the last mile.  Yesterday morning, I was feeling salty 🙂  And I had the perfect plan! I just picked up some smoked salmon at Publix and wanted to recreate one of my new breakfast/brunch/lunch favorites: Nova Lox or just plain old delicious Smoked Salmon Sandwich (the first sounds cooler). The last time I made it, we were out of capers so I tried to be inventive… what could take the delicious salty taste and fun little texture??  GREEN OLIVES!! It was perf!

I am in LOVE with this sammie! Perfectly salty but still creamy with the perfect bit of crunch from the toasted bread and sprouts. I hope you enjoy this as much as I do!!

Smoked Salmon Sandwich or Nova Lox

Serves 2-ish

Ingredients:

(Use this list loosely, add, subtract or use your own amounts)

  • 4 oz Smoked Salmon (I use Echo Falls >> Pictured here>>)
  • Reduced Fat Whipped Cream Cheese Spread
  • Green Olives, chopped (small handful – 5-6)
  • Red onion, Thinly sliced
  • 1 Hardboiled egg, chopped
  • Alfalfa Sprouts

To assemble:

Spread Whipped Cream Cheese onto toasted bread or bagel of choice (I use Ezekiel Flax), top with 2 oz of smoked salmon, sprinkle with chopped green olives, sliced onion and hardboiled egg, spread sprouts evenly to coat the top and VOILA — Delicious Smoked Salmon Open-Faced Sandwich!
