Super Easy & Healthy Chicken Salad

I just LOVE this!!  Even in the midst of our troubles, we can still inspire others.  I have a couple dear friends who do this daily! They are going through some rough times, yet, they always have a positive word to say and a smile on their face.  THAT is inspiring!!

On to the food:) I have made this chicken salad recipe many times and it’s always a hit.  It’s healthy, delicious and super simple – Three of my favorite qualities of a recipe.  Instead of mayonnaise, I use nonfat Greek yogurt and season it up and give it some crunch with onions and/or celery!


I usually prepare my own chicken but you can also use rotisserie chicken from the grocery store.  If you prepare the chicken at home, sprinkle it with Simply Organic Italian Seasoning and bake at 375 degrees for about 15 minutes (check at around 10 minutes).  The seasoning gives the chicken great flavor but one of the things I love about Simply Organic is that it’s low sodium and it doesn’t have a bunch of junky ingredients! 🙂


This simple and healthy chicken salad is a great snack with (my fave) Mary’s Gone Crackers and veggies or in a sandwich! I love to have it for lunch w/ an Ezekiel Pocket Bread  — seriously yummy!! I think you’ll love this! Enjoy! <3

Simple and Healthy Chicken Salad


  • 2 cups shredded chicken (Rotisserie or homemade)
  • 1/4 cup nonfat Greek yogurt
  • 2 teaspoons Simply Organic Italian seasoning
  • 1/4 cup celery and/or onion, chopped – I use more but

Place shredded chicken in a medium bowl. Add Greek yogurt, seasoning and celery and onion.  Mix well and ENJOY!!
