Vegetables for Breakfast!

Yes, you heard that right….

VEGGIES FOR BREAKFAST!! Hoooray!!

This is one of my favorite ways to start any day off with a super-duper-awesome nutrition booster!! Vegetables are like little multivitamins straight out of the ground; what a treat!! AND eating vegetables in combination with a healthy source of fat and protein, like eggs, and a whole grain or fruit will really give you the most nutritional benefit!! Here are my favorite ways to enjoy veggies for breakfast!
1) Simple Egg over greens:

No recipe necessary. I have one egg, any way and throw it over fresh greens. DONE! I usually will have a Greek yogurt, a half banana w/peanut butter or a piece of toast with almond butter or avocado. It’s SOOO YUMMY!!! It’s my favorite egg salad – who says you have to cook the greens?!? PS: Follow me on Instagram to see how often I eat this combo… It’s pathetic!

2) Energizing Green Smoothie

Serves 1

Ingredients:

  • 1/2 cup milk (I use nonfat or Silk Unsweetened Vanilla Almond Milk)
  • 1/2 cup strong black coffee
  • 1 small or 1/2 large banana (frozen preferably)
  • 1 heaping cup of greens (spinach, kale, chard, watercress)
  • 1 tablespoon cacao powder (or cocoa powder if you have that)
  • 1 tablespoon almond butter
  • A few ice cubes
  • Optional: 1-2 dates

Throw all ingredients in blender and GO!!  Enjoy!!

This simple egg soufflé is the perfect blend of the nutrients you need plus super easy! It’s simple and it takes less than 5 minutes to throw together! You can even make a big batch in the oven.

Egg & Veggie Soufflé

Egg & Veggie Souffle

Serves 1

Ingredients:

  • 1 egg
  • 1 egg white
  • 1 handful greens (or any chopped up veggie – I’ve used zucchini or broccoli)
  •  Small handful crushed Rice Chex (optional)

Combine and stir egg and egg white. Spray a small ramekin or glass bowl with cooking spray.  Layer crushed Chex first, then spinach and pour egg/egg white mixture over. Give it a quick stir. Microwave on medium-high heat for 1 /1/2 – 2 minutes; stopping 1 time to stir/mix. Let cool, enjoy!
