Yummmy White Bean and Avocado Salad

This White Bean and Avocado Salad is one of the easiest and most delicious things I’ve had recently! I’m not even slightly fibbing,  it’s GOOD! I put it on sandwiches, enjoy it as a dip with crackers, assorted veggies and pitas or just eat it with a fork.  It combines healthy fats from the avocado, fiber and protein from the beans and a little crunch from the celery! This recipe is so amazing and SIMPLE! Oh and did I mention it’s vegan, gluten free and still divine?!  Make a “tuna” sammie soon! I know I am! 🙂


Lunch last week on millet and flax bread with tomato & sprouts!

White Bean and Avocado Salad


  • 1 can of cannellini, great northern, pinto or navy beans (rinsed well and drained)
  • 1/2 – 1 whole Hass Avocado (depending on how avocado-y you like your mash)
  • 2 tablespoons celery, diced
  • Salt, pepper and/garlic powder, to taste (if desired)


Combine avocado and beans in a shallow bowl. Mash with the back of a fork or spoon until desired consistency. Add celery and seasoning. Mix and ENJOY!
