On this lovely and joyful day, I want to share with you my new favorite: White Bean and Avocado Salad!
This White Bean and Avocado Salad is one of the easiest and most delicious things I’ve had recently! I’m not even slightly fibbing, it’s GOOD! I put it on sandwiches, enjoy it as a dip with crackers, assorted veggies and pitas or just eat it with a fork. It combines healthy fats from the avocado, fiber and protein from the beans and a little crunch from the celery! If you want more fun facts or recipes featuring avocados, click here.
This recipe is so amazing and SIMPLE! Oh and did I mention it’s vegan, gluten free and still divine?! Make a “tuna” sammie soon! I know I am! 🙂
White Bean and Avocado Salad
- 1 can of cannellini, great northern, pinto or navy beans (rinsed well and drained)
- 1/2 – 1 whole Hass Avocado (depending on how avocado-y you like your mash)
- 2 tablespoons celery, diced
- Salt, pepper and/garlic powder, to taste (if desired)
Combine avocado and beans in a shallow bowl. Mash with the back of a fork or spoon until desired consistency. Add celery and seasoning. Mix and ENJOY!
